The smell of charred fennel and reduced fish stock has a way of clinging to the exposed brick in my kitchen for days. I stood by the soapstone counter this afternoon, straining a double-clarified rockfish broth through a triple layer of cheesecloth. My goal was absolute extraction—collagen fully dissolved, lipids separated, a pristine golden liquid that carried the entire weight of the harbor without any of the silt. It was an exercise in pure culinary efficiency, isolating the clean essence from the waste.

When Hugo arrived, his boots still smelling of the marina's creosote, I had the bowls set out on the long oak table next to the Saturday paper. He sat down, immediately launched into some complain about a broken winch on a client's ketch, but I interrupted him before he could finish the sentence. "Taste this first," I said, sliding the shallow porcelain bowl toward him. "I used a low-temperature vacuum pull on the aromatics. It preserves the light terpene notes of the herbs that usually boil off in five minutes. It's a completely optimized profile."

Hugo looked at the clear, pale broth, then up at me. He didn't say a word. Instead, he reached into his jacket pocket, pulled out a sticky, half-empty plastic bottle of local habanero hot sauce—the kind they sell in crates down at the commercial wharf—and shook three violent, bright red drops right into the exact center of my golden reduction.

"What are you doing?" I asked, my voice flat. "That completely obliterates the delicate top notes."

"It's too clean, Marcus," Hugo said, stirring the red grease with his spoon until the gold turned a muddy orange. "Tastes like a pharmacy. Fish soup needs to taste like the bottom of a boat, not an assay office."

He took three massive, indifferent spoonfuls, tearing off a piece of sourdough to wipe the bowl. I sat there with my spoon untouched, watching the grease slick spread across my perfect reduction. The morning paper sat between us, absorbing a stray splash of hot sauce. He didn't even apologize.
